Basket Size
Understanding your basket size is a crucial first step toward achieving balanced and repeatable extraction results at home. Most machines come with different basket sizes.
If you're finding your espresso extracts inconsistently or you're having a hard time balancing your brew, this parameter is one to consider adjusting. In most cases, your basket will have an indicated dose on it. You can use this weight ±2g. If your basket lacks an indicated dose, a few signs can help determine if your dose is in the correct range.
An under-dosed espresso will yield a puck with a wavy surface after extraction.
An over-dosed espresso puck will contact the shower screen before extraction begins. Insert and remove your portafilter without extracting the puck, then look for an imprint on the puck and grinds on the shower screen.
Basic Recipe
Brew ratio: 1:2
Time: 25-30 seconds
Pressure: 9 bars
Temperature: 94°C
Start tasting your espresso once it's within the above time range. Your espresso should be balanced, with a pleasant texture and a lingering aftertaste. A rough, dry, or bitter espresso could mean your grind size is too fine. An acidic, astringent, or minerally espresso could mean it's too coarse. It's recommended that you stick to adjusting grind size alone until you're comfortable with your process and seeing consistent results.
